Siopao is an all-time favorite Filipino snack. It is Chinese in origin, derived from a Hokkien term that literally means “steamed buns”. Today, Siopao is found in every Chinese restaurant, convenience stores, and even in several street food vendors nationwide. Why not? This merienda is tasty and it would definitely fill up your hungry tummy.

Although it may come in different filings or flavors, only two of them dominate: Siopao Asado and Siopao Bola-bola. If you feel like having this snack today, you could definitely try making one at home and have as much as you want! Here is the recipe for DIY Siopao Asado:

Ingredients:

For the Dough:

  • 2 cups warm water
  • 2 ½ tbsp sugar (added to yeast mixture)
  • ½ cup sugar (added to the flour mixture)
  • 1 pouch dry yeast
  • 5 cups all purpose flour
  • 1 ¼ tbsp baking powder
  • 6 tbsp shortening

For the Filling:

  • 2 lbs pork, chopped into small pieces
  • 3 tbsp lard or shortening
  • 2 tbsp garlic, minced
  • 1 large onion, minced
  • 2 tbsp cornstarch, diluted in ¼ cup water
  • 4 tbsp soy sauce
  • 4 tbsp sugar
  • 3 tbsp oyster sauce
  • 1 tbsp hoisin sauce

Cooking Instructions:

  1. Cook the Asado filling by heating the shortening in a pan.
  2. Saute the garlic and onions.
  3. Put-in the pork and cook until the color of the outer part turns light brown.
  4. Add the soy sauce, oyster sauce, hoisin sauce, and sugar then mix well. Simmer for minutes.
  5. Put in the corn starch (diluted in water) and mix until the texture of the sauce becomes thick then set aside.
  6. Make the dough by placing warm water in a bowl then add the yeast and sugar and mix well.
  7. Leave the mixture for 10 to 15 minutes.
  8. In a mixing bowl, put-in the flour, baking powder, shortening (or lard), and the yeast-sugar-water mixture then mix well (bubbles should have formed on top by then).
  9. Knead the combined mixture until the texture of the dough becomes fine. Let the dough rise by setting it aside for at least an hour (place in the mixing bowl and cover the top).
  10. Knead the dough again then cut into individual slices (this will be the dough per individual siopao).
  11. Flatten the dough until a round shape is formed using a rolling pin.
  12. Put the asado filling on the middle of the flattened dough and wrap.
  13. Place the siopao in a steamer and steam for 15 minutes.

Ingredients:
  • 1/2 cup corn oil
  • 1/2 cup sugar
  • 1/3 cup honey
  • 2 pcs eggs
  • 3/4 cup milk
  • 1 cup cornmeal
  • 1 and 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 can corn kernels, drained

Cooking Instructions:

  1. In a bowl, whisk together all dry ingredients and set aside.
  2. In another bowl, whisk together oil, sugar, honey, eggs and milk.
  3. Pour wet ingredients into the dry ingredients. Mix until combined.
  4. Fold in drained corn kernels.
  5. Brush muffin pans with oil and fill ¾ full. Bake at 350° Fahrenheit oven for 12-15 minutes or until toothpick inserted comes out clean.
  6. Cool and eat.

So if you’re a first time baker, why not try out something familiar and tasty to your taste buds? Despite it being franchised by a big time bakery, we present you an easy recipe to do. Check it out here.

Ingredients:

  • 1/4 cup salted butter, melted, plus more for brushing molds and cakes
  • 1 cup cake flour
  • 1/2 teaspoon baking powder
  • 1/3 cup and 1/2 cup sugar, plus more for sprinkling on cakes
  • 6 eggs, yolks and whites separated
  • 1/4 cup water
  • 1/4 teaspoon cream of tartar
  • 1/2 cup grated cheddar cheese

Cooking Instructions:

  1. Preheat oven to 325 degrees F.
  2. Generously brush paper molds with butter and set aside. I make mamon in paper molds but metal ones and ramekins can be used instead.
  3. Sift cake flour, baking powder, and 1/3 cup sugar together into a bowl and set aside.
  4. Combine egg yolks, water, and butter in the bowl of a standard mixer fitted with the paddle attachment. Mix at low speed until well blended. With the mixer running, slowly add the dry ingredients and continue mixing for three minutes or until well blended. Scrape down the sides and bottom of the bowl with a rubber spatula. Set aside.
  5. Combine egg whites and cream of tartar in the bowl of a standard mixer fitted with the whisk attachment. Beat at high speed until egg whites double in volume. With the mixer running, slowly and steadily add 1/2 cup sugar. Continue beating until medium peaks form. Medium peaks hold their shape fairly well but the tip of the peak curls back onto itself when the whisk is lifted.
  6. Gently and swiftly fold in the egg yolk mixture into the egg whites. Divide the batter evenly among the molds. Bake for 15 to 18 minutes or until a toothpick inserted into the center comes out clean. Place the molds on a cooling rack for ten minutes.
  7. Remove from the molds and allow cakes to cool completely on the rack. Brush cakes with butter and sprinkle with sugar and grated cheese.

La Paz Batchoy is named after the La Paz market in Iloilo City where this dish started. Batchoy is a noodle soup mixed with different pork organs, crushed pork cracklings, chicken stock, beef loin and round noodles. This dish is loved by Filipinos everywhere especially in the cold weather where you just want to curl up in your bed and slurp noodles.

But what makes this recipe unique is that it has shrimp to add that extra flavor to this dish. The broth also uses Worcestershire sauce and shrimp paste which gives you the heavenly and homey taste. And the additional of the mami noodles adds a different chewiness to this dish. Try this recipe now!

Ingredients:

  • 1 kilo mami noodles

Broth

  • 1 medium size onion, quartered
  • 1/2 head garlic, crushed
  • 1/2 tsp. shrimp paste (bagoong)
  • 1 tbsp. peppercorns, crushed
  • 2 tbsp. Worcestershire sauce
  • 10-12 c. beef/pork stock
  • 1 tbsp. sugar
  • 1 tsp. soy sauce
  • salt to taste

Toppings

  • 250 g. pork
  • 150 g. pork liver
  • 150 g. shrimps
  • 1 pc. chicken breast

Garnishing

  • chicharon, crushed
  • chopped garlic,fried
  • chopped spring onion

Cooking Instructions:

  1. In a large pot, pour in 10-12 c. of stock (from boiled beef and pork bones) and add all broth ingredients and bring to a boil.
  2. Reduce heat and blanch shrimp until cooked.
  3. Remove shrimp from the pot, remove shell and head each shrimp, set aside.
  4. Add in pork, chicken and liver in the pot, let simmer for 25 minutes or until pork, chicken and liver are tender add more stock if necessary.
  5. Remove pork, chicken and liver from the pot, drain and let cool.
  6. Continue simmering the broth in low heat until ready to serve, season with salt to taste.
  7. Slice the pork, chicken and liver into thin strips and set aside.
  8. Place noodles in serving bowl and pour strained boiling stock over the noodles. Top with pork, chicken, liver, shrimp.
  9. Garnish with chicharon, spring onion and fried garlic.
  10. Serve immediately.

  1. Mix the flour, baking powder, and sugar.
  2. Gently add warm water.
  3. Knead to make a dough and set aside.

For the filling:

  1. Combine the ingredients for the filling.
  2. Take about two tablespoons of the mixture and roll into a ball.
  3. Repeat the steps.

Assemble the Siopao:

  1. Take the dough depending on the size of siopao you want to make.
  2. Fill with the prepared filling and a quarter of the salted eggs and a slice of chorizo.
  3. Steam siopao for 10-15 minutes.
  4. Add siopao to the skillet, setting them on their flat bottoms.
  5. Pan fry for about three minutes until the bottoms turn brown.
  6. Add about 1/4 cup water to the pan and quickly cover with lid.
  7. Turn the heat to low and steam for about four minutes.

Ingredients:
  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cup milk
  • 2 cup boiled macaroni
  • 200 grams grated cheddar cheese
  • ½ tsp salt
  • 2 tbsp green chilies (minced)

For Coating:

  • 2 egg whites
  • 1 cup bread crumbs
  • 1 cup flour
  • oil for deep frying

Cooking Instructions:

  1. Heat butter in a saucepan, add flour and cook over medium heat until become fragrant.
  2. Now slowly add milk and stir continuously so that smooth batter would form. Cook the mixture until it starts to thick.
  3. Add macaroni and stir well in the batter, then add green chilies, black pepper and salt. Cook the mixture until it becomes thicker and denser.
  4. Remove the pan from heat, cool it for 5 mins. then keep it freezer for 10 mins.
  5. Now start making small balls by using 1 tbsp of mixture, dust these balls first in flour then dip in egg whites and in the end coat with breadcrumbs.
  6. Heat oil for deep frying in pan, add the prepared balls in batches and fry over medium-high heat for just 3-5 mins. or until become golden brown and crispy.
  7. Serve the hot fried Mac and cheese bites with ketchup.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 8 egg yolks
  • 2 tablespoons grated orange peel
  • 1 teaspoon vanilla extract
  • 1/3 cup orange juice
  • 1/3 cup water
  • 8 egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 cup white sugar

Cooking Instructions:

  1. Preheat an oven to 325 degrees F and grease 16 muffin cups. Stir the flour, 1 cup sugar, baking powder, and salt together in a large bowl. Make a well in the center of the flour mixture and add the oil, egg yolks, grated orange peel, vanilla extract, orange juice, and water. Mix well by until no lumps.
  2. Beat the egg whites with the cream of tartar until foamy in a large glass or metal mixing bowl. Gradually add the 1/2 cup sugar, continuing to beat until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak. Fold the flour mixture into the egg whites. Pour the resulting batter into the prepared muffin cups to about 2/3 full.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35-40 minutes. Cool in the pans for 10-15 minutes before removing to cool completely on a wire rack.

Filipinos have enjoyed different meals from other countries and later on made their own versions, such as “Pancit Canton”. This Filipino dish is usually served at birthday parties because of its symbolism of a long life represented by the long noodles. Pancit Canton is a variety of tossed noodles also known as Long Mien. Several chopped vegetables and diced meats are added to the flavored noodles to make it look more festive.

This recipe calls for chicken breast and liver as well as carrots and beans to give that extra crunch. And no worries if you suddenly make slurping sounds while eating these delicious noodles, remember it is polite to slurp in front of the Chinese because it means that you enjoy the meal.

Ingredients:

  • 2 tbsp cooking oil 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup chicken breast, thinly sliced
  • 1 cup chicken liver
  • 1/2 cup kikiam
  • 1/2 cup fish ball
  • 2 tablespoon soy sauce
  • 1 teaspoon ground black pepper
  • 1 chicken broth cube
  • 1/4 teaspoon msg
  • 1 cup snow pea
  • 1 medium carrots, julienned
  • 8-10 beans chopped
  • 3 cups water
  • 250 grams of dried canton noodles
  • 1/2 cup celery, chopped finely
  • 1/2 cup green and red bell pepper
  • 1 head medium cabbage, chopped

Cooking Instructions:

  1. In a pan, heat the oil then sauté the garlic and onion
  2. Add the chicken breast, chicken liver, kikiam, and fish ball and cook until the outer part turns light brown
  3. Add the soy sauce, pepper, chicken broth cube, msg, and stir
  4. Put in snow peas, carrots, beans and stir. Add water then bring to boil.
  5. Put in the dried canton noodles, celery, green and red bell pepper, cabbage and cook until the liquid has been absorbed by the noodles

  • 25-30 wonton wrappers
  • pepper to taste
  • chopped spring onions
  • oil for sauteing

Cooking Instructions:

  1. To prepare filling: Combine ingredients in a bowl but use only 1 tsp green onions, salt to taste, and 1 tbsp fish salt. Set aside the remaining ingredients for the broth.
  2. Put 1 tbsp of the meat mixture in the center of each wanton wrapper.
  3. Wrap by folding one side of the wrapper to cover the filling completely, then turning the “unfilled” sides of the wrapper up so that the dumpling resembles a flower. (The filled portion should be in the center.)
  4. Cover the dumplings with a dry kitchen towel and set aside.
  5. To make broth: Saute onion and garlic in oil until light brown.
  6. Add chicken stock and the remaining salt and fish salt from the filling.
  7. Allow to boil, the drop the stuffed dumplings into the boiling broth.
  8. Stir the remaining meat mixture into the broth. Simmer for 10-15 minutes.
  9. Season with pepper to taste.
  10. Before serving, garnish with chopped spring onions.

Remember waking up by the crack of dawn when you were a kid and rushing to the nearest bakery just to get the best batch of pandesals? Or waiting for the pot pot or honking sound by Manong with his bicycle selling freshly bake pandesals at the back? Well, you don’t need to do that anymore and can just simply try out this recipe.

Pandesal, meaning bread of salt, may as well define Filipino pastry. Eaten plain or with fillings, such as coco jam or cheese, Filipinos have enjoyed this crusty but soft as a cloud in the inside every umagahan (breakfast). This pastry is so diverse; it has also been enjoyed when dipped in coffee. Try and make your own by using this recipe!

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups bread flour
  • 1/2 cup white sugar
  • 5 tbsp. melted butter
  • 1 tsp. baking powder
  • 1 1/4 cup fresh milk (lukewarm)
  • 1 pouch rapid rise yeast
  • 1 cup bread crumbs
  • 1 tsp. salt
  • 1 egg
  • 1 tbsp. cooking oil

Cooking Instructions:

  1. Combine the yeast, sugar, and milk and stir until the yeast and sugar are fully dissolved. I’ve chosen milk instead of water because it just tastes better, but you can always use lukewarm water instead of the milk.
  2. In the mixing bowl, combine the dry ingredients: flour, sugar, salt, and baking powder then mix well.
  3. Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until dough is formed. You can use your hands to effectively mix the ingredients.
  4. In a flat surface, knead the dough until the texture becomes fine.
  5. Mould the dough and put back in the mixing bowl, cover with damp cloth and let the dough rise for at least 45 minutes to 1 hour.
  6. After the dough has risen, transfer to a lightly floured working surface. Roll into a log then cut into four to six equal pieces. Take another portion of the dough, roll again into a log and cut into equal pieces, repeat this step until all the dough is done.
  7. Roll each piece of dough in breadcrumbs then arrange on a baking tray for at least an inch apart, you don’t want it sticking together when it rises later on.
  8. Leave the dough in the tray to rise again for 15-20 minutes.
  9. Pre heat the oven at 375 degrees Fahrenheit (190 degree Celsius) for 10 minutes. If using a fan assisted oven, reduced the heat according to instructor’s manual.
  10. Bake for 20-25 minutes or until nicely browned outside.
