Ingredients:

Cinnamon Churros

  • 200 ml water
  • 80g butter
  • 1 ½ tbsp sugar
  • 1 ½ tsp salt
  • 120g all purpose flour
  • ½ tsp vanilla extract
  • 3 large eggs
  • Oil for deep-frying
  • Cinnamon sugar mixture:
  • ½ cup sugar
  • ½ tsp ground cinnamon

Chocolate cinnamon glaze:

  • 100g bittersweet chocolate pieces
  • ¼ cup fresh milk
  • 2 tablespoons butter
  • 1 tablespoon light corn syrup
  • 1 teaspoon vanilla
  • ½ teaspoon ground cinnamon
  • Peanuts, chopped

Salted caramel Dip:

  • 1 cup granulated sugar
  • 1 tbsp light corn syrup
  • ¼ cup water
  • ½  cup heavy cream, heated until warm
  • 2 tbsp unsalted butter, softened
  • 1 tsp salt
  • 1 tsp pure vanilla extract

Strawberry white chocolate glaze:

  • ¼ cup finely chopped fresh strawberries
  • ¾ cup heavy whipping cream
  • 200g white chocolate, very finely chopped

Cooking Instructions:

Cinnamon Churros

  1. Combine water, butter, sugar, salt, vanilla, and water in saucepan and bring to boil. Add flour and stir to combine. Cook for three minutes over medium heat, stirring constantly until the mixture turns into pasty consistency.
  2. Remove from the heat and leave to cool for five minutes. Then add eggs one at a time and stir until well combined, thick, and glossy. Transfer to a piping bag.
  3. Heat oil in large deep frying pan. Using a knife to cut the dough, pipe dough into the oil. Cook, turning with tongs halfway through cooking, for two to three minutes or until golden.
  4. Use a slotted spoon to transfer to a plate lined with paper towel.
  5. Roll churros to the cinnamon sugar mixture.

Chocolate Cinnamon Glaze

  1. Combine all ingredients in a small pan and heat on low fire.
  2. . Whisk in two cups powdered sugar, whisking until glaze is smooth.
  3. Sprinkle glazed churros with finely chopped peanuts. Sprinkle with ground cinnamon.

Salted Caramel Dip

  1. In a heavy saucepan, stir together the sugar, corn syrup, and water until the sugar is completely moistened.
  2. Heat until the sugar dissolves and the sugar syrup is bubbling. Remove it from the heat and slowly and carefully pour the hot cream into the caramel.
  3. Stir in the butter and salt. Gently stir in the vanilla extract.

Strawberry White Chocolate Glaze

  1. Stir chopped strawberries and cream.
  2. Strain cream, pressing gently on strawberry to release as much liquid as possible.
  3. Place white chocolate in medium bowl. Bring cream to a simmer in small saucepan.
  4. Stir until melted and smooth.

Ingredients:

  • White chiffon cake, store bought, sliced into ½ inch thick
  • 250 ml whipped cream
  • 250 ml strawberry jam
  • 250 g white chocolate shavings
  • 500 g fresh strawberries

Cooking Instructions:

  1. Place a layer of  chiffon cake to cover the base of a glass.
  2. Place a layer of strawberry jam and sliced strawberries on top of the chiffon cake.
  3. Put another layer of chiffon cake.
  4. Place the strawberries on top, plus the whipped cream
    and white chocolate shavings.
  5. Garnish with one whole strawberry on top of the glass.

Ingredients:

  • 1 kilo chicken leg and thigh
  • 4 tbsps butter
  • 2 tbsps rock salt
  • Black peppercorn, crushed
  • 1 medium lemon, thinly sliced
  • 1/2 cup soy sauce
  • 1 tbsp parsley, coarsely chopped
  • ½ tsp dried rosemary

Cooking Instructions:

  1. Melt the butter with the oil in a large casserole over medium heat.
    Brown the chicken in batches, about eight minutes per batch, careful not to pierce the skin. Set aside.
  2. Season and rub chicken with salt and pepper.
  3. Pour in soy sauce, and dried rosemary. Put sliced lemon.
  4. Put the chicken in medium heat.
  5. Basting it with its drippings until the chicken is browned and thoroughly cooked.
  6. Garnish with chopped parsley on top.
Mashed Kalabasa

Ingredients:

  • 250 g kalabasa, peeled, deseeded, diced
  • 75 g butter, clarified
  • 100 ml fresh milk
  • Salt and black pepper to taste

Cooking Instructions:

  1. In a saucepan, boil kalabasa with water until fork tender. Drain.
  2. Mash the kalabasa with fork, add in butter and milk. Mix well.
  3. Season with salt and pepper.
Four Dips
1. Cream Cheese and Parsley Dip

Ingredients:

  • 250 grams cream cheese
  • 60 ml water
  • 2 tbsps parsley
  • Salt to taste
  • Ground black pepper to taste
  • 2 slices of lemon juice

Cooking Instructions:

  1. Mix all the ingredients in a saucepan and simmer until thick.
2. Roasted Garlic Aioli Dip

Ingredients:

  • 2 to 3 whole heads garlic
  • Extra-virgin olive oil
  • Salt to taste
  • Ground black pepper to taste
  • 1 cup mayonnaise
  • 1/2 cup fresh lemon juice
  • 1/2 tablespoon dijon mustard
  • 1/8 teaspoon cayenne pepper
  • Dash of worcestershire sauce
  • Chopped fresh parsley for garnish

Cooking Instructions:

  1. Mix all the ingredients in a bowl and garnish with chopped parsley.
3. Spicy Tomato Concasse Dip

Ingredients:

  • 6 pcs tomatoes
  • 1 tsp red chillies, chopped
  • Salt and pepper to taste

Cooking Instructions:

  1. Fill a large bowl with ice cubes and water and set aside.
  2. Bring a large pot of water to a boil.
  3. Cut an X in the bottom of each tomato with a knife.
  4. Place prepared tomatoes in the pot of boiling water and cook until the skins begin to peel off, 10 to 40 seconds.
  5. Transfer tomatoes to the bowl of ice water and allow to cool for two to three minutes. Peel the skin off each tomato.
  6. Cut each tomato in half crosswise and remove and discard the seeds; finely dice the flesh and add red chillies.
  7. Season with salt and pepper.
4. Cilantro Pesto Dip

Ingredients:

  • 1/2 cup nuts, finely chopped
  • 2 cupd cilantro, large stems removed
  • ½ cup parmesan cheese
  • 2 garlic cloves, finely chopped
  • 1/2 cup olive oil
  • 1 1/2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Cooking Instructions:

  1. In a food processor or blender, process the almonds
    until they have turned into fine crumbs.
  2. Add the remaining ingredients and process until smooth.

Ingredients:

  • ½ kilo beef sirloin, medallion cut (1/4 inch thick)
  • ½ kilo pork liver, slice into 1/2 inch thick steaks
  • 1/2 cup soy sauce
  • 4 tbsps liquid seasoning
  • 4 tbsps calamansi juice
  • 1/2 cup cooking oil
  • 4 white onions, sliced into rings
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsps butter
Kinilaw na Puso ng Saging
  • 1 big whole puso ng saging or banana blossom, sliced into bite-size pieces
  • 1 head garlic
  • 1 red onion, sliced
  • 1/4 cup vinegar
  • 1/4 kilo pork cut in cubes
  • 2 tbsps fish sauce
  • Salt to taste
  • Black pepper to taste

Cooking Instructions:

  1. In two separate bowls, marinate beef and liver slices in soy sauce, liquid seasoning, salt and calamansi juice for at least half an hour.
  2. Sauté onions then transfer to a serving dish.
  3. Drain the beef and liver and save the marinade for later use.
  4. On the skillet where you sautéed the onions, fry the liver on both sides until brown. Set aside.
  5. Add beef and sauté until brown.
  6. Add marinade and water.
  7. Let it simmer until tender.
  8. Put in the liver to heat through and season with salt and pepper.
  9. Transfer the beef and liver on the serving dish and put the onions on top.
Kinilaw na Puso ng Saging
  1. Heat oil in a pan and start sautéing your garlic and onions.
  2. Add your meat and banana blossom.
  3. Pour half a glass of water, cover and let it simmer for at least twenty minutes.
  4. Check the tenderness of your vegetable, add some fish sauce, salt and pepper, and vinegar. Let it simmer for another five minutes.

Ingredients:

  • 500 grams beef sirloin, thinly sliced
  • 2 tbsps sugar
  • 1 tsp ground black pepper
  • 1 cup soy sauce
  • 3 tbsps minced garlic
  • 1 tsp salt
  • 1 cup fresh milk
  • 1 cup water
  • 2 tbsp cooking oil

Cooking Instructions:

  1. In a pan, place water and bring to a boil
  2. Add the beef tapa, sugar, black pepper, soy sauce, garlic and salt
    until the water evaporates.
  3. When all the water evaporates, add cooking oil in the pan then fry until the tapa is done and set aside.
Tinapa
  1. Store bought (Fry to desired crispiness)
Longganisa
  1. Store bought (Fry until brown and cook through)
Scrambled Egg

Ingredients:

  • 1 tbsp butter
  • 4 eggs
  • Salt and freshly ground black pepper
  • 1/4 cup shredded cheese

Cooking Instructions:

  1. In a bowl, whisk eggs, salt and black pepper until frothy, set aside.
  2. In a non-stick pan, heat butter and pour in eggs, while stirring, cook for a few seconds and add cheese, continue to cook until the cheese melt.
A. Sinangag

Ingredients:

  • ½ cup oil
  • 4 cups cold, cooked white rice, separate grains
  • 1 head garlic, peeled and minced
  • 2 tbsps spring onions, finely chopped
  • Salt and pepper to taste

Cooking Instructions:

  1. In a small pan, heat oil.
  2. Add garlic and cook, stirring occasionally, until golden brown.
  3. With a slotted spoon, remove from pan and drain on paper towels.
  4. In a wok, heat 2 tablespoons of oil until very hot.
  5. Add spring onions, rice, and cook until grains start to sizzle and toss.
  6. Add garlic bits and spring onions then stir to combine.
  7. Season with salt and pepper.
B. Champorado

Ingredients:

  • 1 cup glutinous rice, washed, soaked for at least 30 minutes; drained
  • 3 cups water
  • 1 cup cocoa powder
  • 1/2 cup brown sugar
  • 1 cup evaporated milk

Cooking Instructions:

  1. Place glutinous rice and water in a saucepan bring to a boil. Reduce heat to low; cover and cook for about 25 minutes. Stir continuously.
  2. Add cocoa powder and sugar; stir and mix well. If it gets too thick, add a little of milk.
  3. Transfer into bowls. Swirl milk on top.
C. Juice and Coffee

Ingredients:

  • 2 tbsps olive oil
  • 1 thumb-sized fresh ginger, finely sliced into matchsticks
  • 1 head garlic, finely sliced
  • 1 tsp chili flakes
  • 400g shrimp
  • 150g tenderstem broccoli, trimmed
  • 4 tbsps sweet chili sauce
  • Juice of 1 lime, plus lime wedges
  • 1/2 cup fresh coriander leaves
  • Toasted cashew nuts, to serve

Cooking Instructions:

  1. Heat the oil in a pan or wok over high heat and stir-fry the ginger, garlic and chili flakes for a couple of minutes, then add the shrimp and cook for two to three minutes until pink.
  2. Remove from the pan and set aside.
  3. Add the broccoli to the pan with a splash of water and cook for two to three minutes, stir in the sweet chili sauce, lime juice and coriander.
  4. Return the shrimps to the pan, mix well, then sprinkle with the cashew nuts and top lime wedges.

  • 250g Vigan longganisa, casings removed
  • 1 pc red onion, sliced
  • 1 pc bell pepper, sliced
  • 1 pc finger chili, sliced
  • 1/2 cup mushrooms, sliced
  • 1 tbsp vinegar
  • 4 pcs eggs, whisked
  • 3 tbsps cream
  • 1 bunch spring onions
  • Salt and pepper to taste

Cooking Instructions:

  1. In a bowl, combine whisked eggs, cream, salt and pepper and sliced spring onions. Set aside.
  2. In a pan, saute and brown the longganisa in little oil.
  3. Add in the onions, bell peppers, finger chillies and butter.
  4. Add in the mushrooms and a splash of vinegar.
    Cook for a minute or two then set aside.
  5. In the same pan, cook the egg until cooked through.
  6. Place the egg on a plate, top it with the sautéd longganisa and vegetables
    and fold the egg.
  7. Garnish with spring onions and serve.

  • 3 cloves of garlic
  • 2 cups of rice
  • 2 eggs, beaten and scrambled
  • 1 tbsp of vinegar
  • Salt and pepper to taste

Cooking Instructions:

  1. Pat the fried pusit with paper towels to drain the excess oil.
    Cut into thin strips.
  2. Reduce the oil to just about a teaspoon in the pan where you fried the dried pusit.
  3. Sauté the garlic until the color changes to golden brown.
    Add the rice and toss.
  4. Toss in the scrambled eggs into the rice.
  5. Lastly, season with a dash of salt and pepper and drizzle with your favorite vinegar.
