Egg Salad with Bacon & Sriracha-Honey Mustard Dressing

Ingredients:

  • 12 hard boiled eggs, peeled, diced
  • 1 pound bacon, cooked, chopped
  • 1 5.3-ounce container plain Greek yogurt
  • 3 tablespoons mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon sweet hot mustard
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon sriracha
  • 3 green onions, finely chopped
  • “Everything” Italian bread, for serving
  • Fresh baby spinach, for serving

Cooking Instructions:

  1. Combine the first 11 ingredients in a bowl; mix well. Chill. Toast the bread (if desired). Serve egg salad on bread with baby spinach (or eat it with a spoon! Yum!)
