Ingredients:
- 12 hard boiled eggs, peeled, diced
- 1 pound bacon, cooked, chopped
- 1 5.3-ounce container plain Greek yogurt
- 3 tablespoons mayonnaise
- 1 tablespoon honey
- 1 tablespoon sweet hot mustard
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1/4 teaspoon smoked paprika
- 1 teaspoon sriracha
- 3 green onions, finely chopped
- “Everything” Italian bread, for serving
- Fresh baby spinach, for serving
Cooking Instructions:
- Combine the first 11 ingredients in a bowl; mix well. Chill. Toast the bread (if desired). Serve egg salad on bread with baby spinach (or eat it with a spoon! Yum!)
