Ingredients:
  • 1 kilo potatoes, peeled
  • ½ medium onion, peeled and chopped finely
  • 1 tbsp garlic cloves, peeled and sliced thinly
  • 2 medium tomatoes
  • ½ cup fresh milk
  • ¼ cup butter, softened
  • Oil for frying

Seasonings:

  • ½ tsp black pepper, finely ground
  • Salt

Cooking Instructions:

  1.  Boil potatoes in a saucepan and add a pinch of salt.
  2. Simmer until cooked. Dram.
  3. Put potatoes in a large mixing bowl. Mash, then set aside.
  4. Cut tomatoes in half and remove seeds. Slice into thin strips.
  5. Fry tomatoes. Peel and discard the skin, then put in a small saucer. Set aside.
  6. Fry onion and garlic until golden brown. Combine with fried tomatoes. Mash thoroughly.
  7. Put in bowl with mashed potatoes.
  8. Add milk and butter. Mix thoroughly, then sprinkle with salt and pepper.

Ingredients:
  • 4 cups Raw Peanuts
  • 2 heads garlic, crushed, skin removed
  • 2 cups vegetable oil
  • 1 tablespoon Kosher Salt
  • pinch of Sugar (optional)

Cooking Instructions:

  1. Using a small but deep pan, heat the oil on medium low or medium stove top setting.
  2. Put in the garlic.
  3. Add the peanuts and cook for 10-12 minutes, or until the peanuts are medium brown. Residual heat will continue to cook the nuts so don’t wait until they are golden brown before taking it out of the hot oil.
  4. Pass the peanuts and garlic in a strainer and drain on paper towels.
  5. Add the Salt and pinch of sugar, shake and serve.

Main Ingredients:

For the sushi rice: 

  • 1 cup Japanese short grain rice
  • 1 ¼ cup cold water
  • 3 tbsps mirin
Cooking Instructions:
  1. Rinse rice with water until the water runs clear.
  2. Cook rice in a small rice cooker.
  3. Once cooked, let it stand for 10 minutes.
  4. Place rice in a ceramic bowl then slowly add vinegar while mixing.
  5. Set aside to cool in room temperature but keep the rice covered with a damp cloth while preparing.

Longganisa Maki Ingredients:

  • 2 cups sushi rice
  • 6 pcs longganisa, fried and sliced vertically
  • 1/3 cup garlic, finely minced and toasted
  • 1 small cucumber; sliced, peeled, and cored
  • 3 pcs egg, scrambled and sliced vertically
  • 4 sheets of nori seaweed wrapper
  • Mayonnaise
Wasabi-soy dip:
  • Wasabi
  • Japanese soy sauce
  • Calamansi

Longganisa Maki Procedure:

  1. Place a bamboo sushi mat on a flat surface.
  2. Place a sheet of clear plastic wrap on top.
  3. Sprinkle toasted garlic on top then cover the cling wrap with a thin layer of sushi rice, press it firmly with a bamboo spoon, and distribute it evenly on the edges.
  4. Place nori on top of the rice.
  5. Place a teaspoon of mayonnaise across the top edge then place strips of longganisa, cucumber and egg side-by-side.
  6. Roll the bamboo mat starting at the edge while pressing it firmly, continue until it reaches the end of the bamboo mat.
  7. Remove the roll from the bamboo mat and carefully slice into 1-inch thick pieces.
  8. Moisten the sharp knife every time you cut a new slice.
  9. Sprinkle toasted garlic on top of sliced sushi and serve with wasabi-soy dip.

For the Wasabi Soy Dip:

  1. Mix soy sauce and wasabi paste to your desired taste and add calamansi juice.

Tinapa Fried Maki Ingredients:

  • 2 cups sushi rice
  • 8 pcs tinapa, peeled and flaked
  • 1 small carrot, peeled and sliced vertically
  • 150 grams cheese, sliced vertically
  • 1/4 cup spring onions, chopped
  • 4 sheets of nori seaweed wrapper
  • Mayonnaise
For dredging: 
  • 1/2 cup all-purpose flour
  • 2 pcs egg
  • 1 cup breadcrumbs
  • Oil for deep frying
For Spicy Mayo dip:
  • 1/2 cup mayonnaise
  • 2 tbsps hot sauce

Tinapa Maki Instructions:

To make Tinapa Maki:
  1. Place a bamboo sushi mat on a flat surface then place a sheet of clear plastic wrap on top.
  2. Cover the clear plastic wrap with a thin layer of sushi rice, press it firmly with a bamboo spoon and distribute it evenly on the edges.
  3. Place nori on top of the rice.
  4. Place cheese across the top edge then place strips of tinapa and carrots side-by-side.
  5. Roll the bamboo mat starting at the edge while pressing it firmly, continue until it reaches the end of the bamboo mat.
  6. Remove the roll from the bamboo mat and coat the sushi roll with flour, egg and breadcrumbs.
  7. Deep-fry the sushi roll until golden brown.
  8. Drain excess oil with paper towel.
  9. Carefully slice into 1-inch thick pieces.
  10. Moisten the sharp knife every time you cut a new slice.
  11. Sprinkle spring onion on top of sliced sushi and serve with spicy mayo dip.
Procedure for the dip:  
  1. Mix the mayonnaise and hot sauce to your desired taste.

Ingredients:

  • 1 kilo vermicelli noodles, soaked and softened in hot water
  • 400 grams dried wood ear mushrooms, re-hydrated in water
  • 1 medium shallot, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 pcs grated carrots
  • 250 grams ground pork
  • 1/4 cup fish sauce
  • 3 tablespoons sugar
  • 2 teaspoons black pepper
  • 2 teaspoons salt
  • 250 grams shrimp in shell, peeled and defined
  • 25 pieces 8-inch square frozen spring roll pastry wrappers, thawed
  • 1 large egg yolk, lightly beaten
  • 4 cups vegetable oil for deep-frying
  • Cilantro leaves

For the dipping sauce:

  • 5 1/2 tablespoons sugar
  • 3/4 cup warm water
  • 1/4 cup plus one tablespoon fish sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons fresh lime juice
  • 2 garlic cloves, minced
  • 2 chilis, thinly sliced

Cooking Instructions:

For the filling:

  1. Saute garlic and shallots along with carrots, pork, fish sauce.
  2. Add sugar, pepper, and salt.
  3. Put the shrimp, mushroom, cilantro and noodles.
  4. Let it cool before wrapping.
To assemble the spring rolls:
  1. Place one wrapper on a work surface.
  2. Cut the wrapper diagonally in half to form two triangles.
  3. Put two tablespoons of the filling in the middle of the wrapper.
  4. Dab the top corner with yolk, roll up wrapper into a long thin roll, tucked ends inside.
  5. Fry the rolls in batches until golden brown and cooked through.
  6. Serve with dipping sauce.

For the dipping sauce:

  1. Mix the sugar and water together until sugar is dissolved.
  2. Stir in remaining sauce ingredients.
  3. Serve with the spring rolls.

Ingredients:

  • 4 potatoes, sliced into ¼” rounds
  • 2 packs Ferna all-purpose breading mix (alternative: Mert’s Chicken Breading)
  • 2 eggs
  • 1/4 cup water
  • Cooking oil, for deep frying
  • Lady’s Choice Caesar or ranch dressing

Cooking Instructions:

  1. In a bowl, whisk together eggs and water. Set aside.
  2. Clean potatoes and slice into ¼” round, then put them straight into the egg-water mixture to soak.
  3. Heat oil until 350 degrees Fahrenheit.
  4. Coat potato slices with breading and deep fry in batches for 3-4 minutes. Drain in kitchen towel after to absorb excess oil.
  5. Transfer to serving plate and serve with either Caesar or ranch dressing.

  • 4 bacon strips, finely chopped
  • 2 cup mashed potatoes
  • 1 egg yolk
  • 2 onions, finely chopped
  • 3/4 cup plain flour
  • 40 g mozzarella, cut into small strips
  • 1 1/2 cup fresh breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 5 tbs oil

Cooking Instructions:

  • Heat non stick frying pan over medium heat and cook bacon 3-4 minutes or until crisp.
  • Combine mashed potato, egg yolk, onion, bacon and ¼ cup of flour in a large bowl.
  • Roll heaped tablespoons of mixture into strips. Push one cheese cube into the centre of each strip, molding mixture around to enclose the cheese.
  • Place remaining flour on a plate and breadcrumbs on another plate.
  • Whisk milk and egg together and place in a shallow bowl.
  • Roll croquettes in flour shaking off any excess. Dip in egg mixture then coat in breadcrumbs.
  • Heat oil in frying pan.
  • Cook croquettes in batches then transfer to a plate lined with paper towel and serve hot.

Ingredients:
  • 1 large yellow onion, sliced
  • 1  1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 piece egg, beaten
  • 1 cup milk
  • 1 cup panko bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 cups cooking oil

Cooking Instructions:

  1. Break up the onion slices into rings. Set aside.
  2. Combine flour, baking powder, and salt, in a small bowl and mix well.
  3. Dredge the onions on the flour mixture and set aside.
  4. Meanwhile, make the batter by adding the egg and milk on the flour mixture and whisk.
  5. Dip the onions on the batter and allow the extra batter to drip.
  6. Place the breadcrumbs in a plastic bag or container and put-in the onions rings.
  7. Heat a cooking pot and pour-in cooking oil.
  8. When the oil is hot, deep-fry the onion until the color turns golden brown (usually 2 minutes or so).
  9. Remove the onion rings from the cooking pot and place in a plate lined with paper towels, to absorb the excess oil.
  10. Transfer to a serving plate and serve.
  11. Share and enjoy!

  • 10-15 lumpia wrappers
  • 100 grams (3.5 oz.) cheddar cheese
  • oil for deep frying
  • water for sealing lumpia wrappers

  1. Steam the lumpia wrappers for about 2 minutes. Set aside.
  2. Slice the cheese into 10-15 sticks, each about 3 inches long and 1/2 inch wide. Put each stick in a lumpia wrapper. Seal each.
