Ingredients:
- 8 boneless chicken thighs – cut into chunks
- 3 bell peppers – any color – sliced into chunks
- 1 ½ large onions – sliced into large pieces
- kabob sticks – soaked in water for at least 10 minutes before using
For the Marinade:
- 2 cloves of garlic – chopped
- juice of 2 limes
- 1 tsp. turmeric
- 1 tsp. ground coriander
- 1 tsp. salt
- ½ tsp. black pepper
- ½ tsp. paprika
- 2 tsp. chopped fresh basil
- 3 tbs. vegetable oil
Tzatziki Sauce:
- 10 oz. sour cream
- 1 small cucumber
- 1-2 cloves of garlic
- juice of ½ lemon
- ½ tsp. salt
- ½ tsp. black pepper
- 3-4 tbs. fresh dill
Cooking Instructions:
For Marinade and Kabobs:
- Combine all of the above for the marinade and place in a container with the chicken. Let this marinade for 1 hour or up to overnight.
- Alternate the chicken with the peppers and onions on the kabob sticks.
- Barbecue on the grill until the juices of the chicken run clear.
Tzatziki Sauce:
- Combine all of the above in a blender and give a few good chops.
- Serve as a dipping sauce with the chicken kabobs.
